Description: Title: Head Chef Location: Loughborough Reporting to: General Manager Set in the heart of Loughborough University’s world-leading sports facilities, this new, purpose-built facility will provide an inspiring, high-performance environment for athletes, businesses and fitness enthusiasts. The nutritional philosophy of the EAC is to provide a world class, flexible, performance nutrition food service in a purpose-built environment: enabling elite athletes to meet their individual dietary needs. The menu and environment will serve as a vehicle to educate and empower athletes to make appropriate choices in order to achieve their individual nutritional goals, ultimately enhancing health, recovery and performance. The successful candidate will be required to work closely with performance nutritionists from elite and professional sports to ensure that this philosophy is aligned. The chef will be responsible for ensuring that the menus and recipes adhere to the presentation, taste and performance needs of the guests. Due to the affluent location of the café and restaurant, our customers expect a world class standard of food and customer service interaction from the chef. The successful candidate will be required to engage with athletes and guests at the live cooking station during meal service to ensure that their needs are met, as well as running cooking demonstrations throughout the year. The Role: Oversee the menu delivery in all food areas. Creating menus as required to the high quality expected ensuring all food production is of the highest standard. Sourcing quality food and kitchenware. Providing financial information and stock figures as required. Keep stock wastages to a minimum a stay within GP parameters. Training and developing the kitchen and organizing staff rotas. Assisting the Management in optimizing all revenue streams to maintain sales growth. Ensuring compliance with all food hygiene and health and safety legislation and best practice. To liaise with the Sales and Hospitality team to plan and deliver customer requirements. To recruit and develop a kitchen team. Assisting with all administrative duties including good received notes and correct invoicing. To plan events and ensure that all areas are set up for forthcoming events. To manage kitchen areas, ensuring stock rotation, cleaning and suitable levels/ranges of stock are in place. To ensure all available resources are used to their optimum to ensure a smoothly run and profitable operation. To ensure cleaning schedules are adhered to. To work in partnership with all other arena departments to ensure best available resources are available. To work closely with the Food & Beverage Managers on kiosk menu and cleanliness of all concourse Food and Beverage. To undertake any other duties as may from time to time be reasonably requested.
